Why do so many things dissolve in water?
Its bent little V shape gives it a tiny positive side and a tiny negative side, so it can grab onto other molecules from both directions. Drop salt into water, and the water molecules tug the positive and negative ions apart until the whole crystal falls to pieces. Sugar gets the VIP treatment, too. Water wraps around each molecule and carries it off without making a fuss. Oil, though? Different story. Oil has no electrical charge, so water won’t mix. All in all, though water is a tiny molecule with huge networking skills.
